Since January, I have been traveling to Paris 2-4 times per month on business.  While it is not a holiday, it seemed like I should start a living post on Paris and some of my recommended places to visit:

Le Garde Robe (41 rue de l’arbre sec 75001) : This tiny little wine bar is hidden close to Louvre Rivoli.  They have a fantastic selection of wine and a really nice formage/chartucerie plate.  I’d recommend calling ahead as it is small and often pretty filled.

Rue Montorgueil 75002 Paris: Great area with lots of bars and restaurants.  A good place for oysters is: Le rocher du Cancale

Fish (la Boissonnerie, 69,rue de Seine):  A restaurant run by expats. Great seafood and good wine. Also, they have delicious hot focaccia bread that comes from the bakery across the street and one of the owners has a friend/partner in the wine business, so they have very good wine choices. They speak English and  is even a good place to go alone – they have a bar and are pretty friendly.  Portions are huge for France.  St Germaine is also a great area to walk
around, shop, eat, drink, etc.

Opera: my favorite area to stay in, primarily because it is centrally located and convenient to get to everything (work, train station, good restaurants/bars, etc).
